Year 10 Hospitality

Cutting techniques for fruit and vegetables can be divided into two categories: precision cutting and rough cutting. Here we have a few of our Year 10 Hospitality students perfecting their precision cuts, in particular julienne, brunoise, macedoine and jardiniere. These ingredients went into a chicken and vegetable tart which sure was tasty.
